Smoked Ham, Spinach & Goats Cheese Custard Muffins
Ingredients:
For the Cheese Custard Base
- 500 ml unsweetened almond milk (or preferred milk)
- 40 g grated cheese (e.g., cheddar)
- 3 tablespoons cornflour
- 2 large eggs
- **For the Filling:**
- 4 cubes frozen spinach (about 100 g)
- 125 g lean chopped smoked ham or pancetta
- 100 g goats cheese (sliced into 12)
- Chopped Chives (for garnish)
Method
In a saucepan over medium heat, warm the unsweetened almond milk until just below boiling.
In a bowl, whisk together the cornflour and eggs until smooth. Gradually add the warm milk to the mixture, whisking continuously to prevent lumps.
Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens. Stir in the grated cheese. Set aside.
In a frying pan, cook the chopped smoked ham or pancetta over medium heat until browned and crispy, about 5-7 minutes. Add the frozen spinach to the pan and cook until fully thawed and any moisture has evaporated. Ensure there is no water remaining, then remove from heat.
Layer the Muffins:
- Preheat your oven to 180°C (350°F) or prepare your air fryer.
- Grease a 12-cup muffin tin.
- Start by adding a spoonful of cheese custard to the bottom of each muffin cup.
- Layer the ham and spinach mixture evenly across the cups.
- Top each with a slice of goat cheese.
- Finally, pour more cheese custard over the top until the cups are filled.
- Sprinkle with chopped chives if desired.
- Bake in the oven or air fry 180 degrees for 14-18 minutes, or until the muffins are firm to the touch and lightly golden on top.
- Allow to cool completely in the tin before gently removing, or if you can’t resist, serve warm by spooning directly from the muffin cups.
