This has to be one of best soups I’ve ever made, it was recently used at a function and compliments were in abundance with one gentleman commenting he could have been eating this in any Michelin star restaurant - so I just had to share it with you! Full of vitamins, minerals, over 7g protein and antioxidants, this soup promises to be a crowd pleaser! Using just 4 ingredients plus water it’s simple and even cheap to make!


Serves 4

500g Broccoli (use can also use frozen)

150 SingleCream or Dairy Free Soy Cream

50g-100g Stilton Cheese crumbled (depends on preferred cheese taste- less for milder, more for stronger)

300ml Water (add more hot water for thinner soup - but you do this once it’s blended.)


Place all the ingredients into a pan or soup maker. For stove top method, stir regularly and bring to just before boiling then simmer until broccoli is very soft and blend. Add more hot water if preferred. Season to taste.


In a soup maker add all the ingredients press smooth function - it should take approximately 19 minutes. Add more hot water when blended if thinner soup is preferred.
