Piri Piri Chicken Skewer Stack

These chicken skewer stacks look so impressive, taste delicious and are so easy to make! The whole family will love them. Perfect as part of a main meal, with salad, as a snack or for a quick and tasty lunch. Can be eaten hot or cold. They are particularly good cooked on the BBQ.
Serves 4
8 Chicken Thigh Fillets
1 Tablespoon Smoked Paprika
3 Cloves Garlic Crushed
1 Tablespoon Olive Oil
1/2-1 Teaspoon Piri Piri Oil or Piri Piri Spice
3 Tablespoons Tomato Puree
3 Long Skewers
Mix the paprika, garlic, oil, Piri Piri and tomato puree together and rub into each chicken thigh. Using the three skewers (one at each end and one in the middle) push the thighs on top of each other to create your stack. Air fry or oven bake at 180 degrees for 30-45 minutes or until fully cooked (75 degrees in the centre/thickest part). Turn the chicken during cooking, to ensure even cooking. The chicken should be slightly blackened around the edges. Also perfect for a bbq.
