Avocado Chocolate Mousse with Chocolate Bark Topping

This healthy chocolate mousse recipe is high in protein and healthy fats and willl definitely satisfy that sweet craving.
100g Dark chocolate (70% cocoa)
1 Ripe Avocado (200 grams)
1 Tablespoon Cocoa powder (unsweetened)
1 Tablespoon Maple syrup or honey (optional)
300g soft cheese
1 Teaspoon Flavouring of your choice
5g Cream of tartar
1 Egg White
5g Chopped Nuts, finely chopped
5g Chopped Dates, finely chopped
5g Chopped Figs, finely chopped
Sprinkle Freeze Dry Raspberries/Strawberries
Method
Melt the chocolate in a bowl over a pan of hot water. Blend the avocado and cocoa powder together until smooth. Add the maple syrup (if using) and flavouring. Mix in the cream cheese. In a separate bowl whisk the egg white until forming soft peaks then add the cream of tartar and whisk until glossy.
Fold the egg white into the mixture until fully combined, quickly add in half the melted chocolate. Spoon into ramekins. Smooth off the top with the back of a spoon.
Quickly pour over the remaining melted chocolate and sprinkle with the nuts, figs, dates and freeze dried raspberries.
