“The Italian Job• Smash Burger Stack
Ingredients
- 1 kg minced beef (5% fat)
- 1 large onion, finely sliced
- 1 red bell pepper, finely sliced
- 1 green bell pepper, finely sliced
- 200 g mushrooms, finely sliced
- 4 slices of bacon
For the Cheese Sauce
- 2 tablespoons sun-dried tomato paste
- 1 tablespoon tomato purée
- 100 ml milk
- 100 g cheddar cheese, grated
Method
- Finely slice the onion, bell peppers, and mushrooms.
- Cook the bacon in a frying pan until crispy, then set aside.
- In the same pan, fry the sliced onions until golden brown.
- Add in the sliced bell peppers and mushrooms, cooking until softened. Set aside.
To make the Cheese Sauce
- In a saucepan, combine the sun-dried tomato paste, tomato purée, and milk.
- Heat gently, stirring until well mixed.
- Add the grated cheddar cheese and stir until melted and smooth.
For the Burgers
- Divide the minced beef into 8 equal portions (approx. 125 g each).
- Form balls and then smash them flat onto a hot grill or frying pan. Cook for about 2-3 minutes on each side until nicely browned.
To assemble
- Start with a burger patty, followed by a layer of cheese sauce.
- Add fried onions, then bell peppers, and mushrooms.
- Top with another burger patty and repeat the layering with cheese sauce, onions, mushrooms, and crispy bacon.
- Finish with a final drizzle of cheese sauce and a sprinkle of remaining onions and peppers.
