Red Onion & Cheese Quiche with Avocado Pastry

This is fab and a great, healthy, high protein version of a typically unhealthy dish. The avocado pastry is a great change from normal pastry and you really can’t tell it’s made from avocado! The coarse grain flour works really well, you could also use a whole meal flour. Great for picnics and packed lunches!


Avocado Pastry

200g Coarse Grain Wholemeal Flour plus some for dusting

2 Ripe Avocados

1 Tablespoon Olive Oil


For the Filling


8 Eggs

300g Half Fat Crème Fraiche or Cottage Cheese Blended

1 Red Onion finely sliced

200g Grated Cheddar Cheese

Salt & Pepper


Method


Blend the avocado, oil and flour in a food processor or blender or by hand to form a pastry. Roll out on a floured surface to the size of the quiche dish. Oil the dish and add the pastry, covering the edges. Cook at 200 degrees 10 mins. Remove from the oven and reduce heat to 180 degrees.


Fry the onions in a little olive oil until soft. Leave to cool.


Whisk the eggs with a fork then whisk in crème fraiche or cottage cheese. Scatter the cooled onions and half of the grated Cheddar into the baked pastry case. Pour the egg mixture over the top, sprinkle with remaining cheese, and bake at 180°C (160°C fan) for 25–30 minutes until just set with a slight wobble in the middle.
