Marry Me Chicken -The Food of Love

Marry Me Chicken" is called that because the dish, a creamy chicken with sun-dried tomatoes and Parmesan, is considered so delicious and that it's rumoured to inspire marriage proposals or make people feel like they want to marry the cook, making it the perfect dish for Valentines Day.


Ingredients

4 Chicken Breasts

1 Onion finely chopped

3 Cloves Garlic

1 Teaspoon Mixed Herbs

1/2 Jar Sun-dried Tomatoes (approx 8) chopped

200ml Light Cream

1 Chicken Stock Pot

1/2 Teaspoon Chilli Flakes (optional)

2 Tablespoons Fresh Parmesan Cheese

Plain Flour for Dusting

2 Tablespoons Olive/Rapeseed Oil


Method


Tip enough flour into a bowl and lightly dust the chicken. Heat 1 Tablespoon Olive/Rapeseed oil in a non stick frying pan and fry until golden brown on each side. Remove from the pan and add the remaining tablespoon oil, fry the onions until golden. Add the garlic and fry for a further minute. Return the chicken to the pan and add the herbs and chilli flakes. Fry for a further minute and add the cream, chicken stock pot and sun-dried tomatoes and cook on a medium heat until chicken is fully cooked. Add the Parmesan cheese and cook for 2 more minutes.
