Cheese Burger Pie

I can’t wait for you to try this! My husband had mentioned it a while ago but the recipe he showed me was over a days worth of calories for just one portion.


You can imagine his delight when he saw his lunch today and for a fraction of the calories. It’s a perfect treat instead of a takeaway plus it’s only 300 calories per serving and 22g protein per serving!


Cheeseburger Pie Recipe


Ingredients:


- 500g low-fat minced beef

- 1 onion, finely chopped

- 1 gherkin, finely chopped

-For the cheeseburger sauce

- 500ml unsweetened almond milk

- 2 tablespoons cornflour

- 1 tablespoon tomato puree

- 1 teaspoon mustard

- 1/2 teaspoon salt

- 100g Red Leicester cheese, grated

For the crust:

- 1 sheet of light puff pastry


Method


1. **Preheat the Oven:**

Preheat your oven to 200°C (390°F).


2. **Prepare the Filling:**

- In a large frying pan over medium heat, add the low-fat minced beef and onion. Cook until the beef is browned and the onion is soft.

- Stir in the finely chopped gherkin and cook for an additional 2-3 minutes. Remove from heat and set aside.


3. **Make the Cheeseburger Sauce:**

- In a saucepan, combine the almond milk and cornflour over medium heat. Whisk continuously until it starts to thicken.

- Add the tomato puree, mustard, and salt, mixing well.

- Stir in the grated Red Leicester cheese until melted and smooth. Remove from heat.


4. **Combine the Filling and Sauce:**

- Pour the cheeseburger sauce into the beef and onion mixture, stirring until everything is well combined. You can add a little extra milk for a thinner sauce.


5. **Assemble the Pie:**

- Roll out the light puff pastry if necessary to fit a pie dish. About 2/3 of the sheet should be enough, add the pastry into the dish, pressing it gently against the edges. Remove any excess

- Pour the beef and sauce mixture into the pastry-lined dish.

- use any leftover pastry to create a lattice top or decorative cutouts.


6. **Bake the Pie:**

- Bake in the preheated oven for about 25-30 minutes, or until the pastry is golden brown and crispy.


7. **Serve:**

- Allow the pie to cool for a few minutes before slicing. Serve warm and enjoy your cheeseburger pie!
